     Title: Tomato And White Bean Salad With Watercress

     Yield: 4 Servings

     1    Shallot; halved
     1 cl Garlic; crushed
     3 tb Olive oil
     2 tb Fresh lemon juice
     1 ts Dijon mustard
   1/2 ts Salt
   1/4 ts Black pepper; freshly ground
    15 oz Can cannellini beans
          - (1-1/2 c); rinsed, drained
     2 bn Watercress; tough stems
          - removed; leaves coarsely
          - chopped
    12    Grape or cherry tomatoes;
          - halved
     8    Kalamata olives; pitted
     2 tb Fresh basil; chopped

 Place the shallot and garlic in a food processor and process to a
 paste. Add the olive oil, lemon juice, mustard, salt, and pepper.
 Process until well blended and set aside.

 In a large serving bowl, combine the beans, watercress, tomatoes,
 olives, and basil. Pour the dressing over the salad and toss gently
 to combine. Serve immediately.
