     Title: Lima Bean And Tomato Salad

     Yield: 4 Servings

     3 c  Frozen lima beans;
          - cooked per pkg directions,
          - cooled
     2 c  Grape tomatoes; halved
   1/3 c  Scallions; minced
   1/4 c  Fresh parsley; minced
   1/4 c  Basil; chopped
   1/4 c  Kalamata olives;
          - pitted, sliced
     2 tb Fresh lemon juice
     2 tb Olive oil
   1/2 ts Salt
   1/4 ts Black pepper; freshly ground

 Frozen lima beans are economical and easy to prepare. They also
 happen to look and taste great in this main-dish salad. Grape
 tomatoes tend to be much sweeter than cherry tomatoes, but if you
 can't find them, feel free to use cherry tomatoes instead.

 In a large serving bowl, combine the cooked lima beans, tomatoes,
 scallions, parsley, basil, and olives. Add the lemon juice, olive oil,
 salt, and pepper. Toss gently to combine, then serve.
