                   Salat Gezer (Kibbutz Carrot Salad)

  2      c             Carrot -- grated
  3      lg            Oranges -- juice of
                       - (1/2 to 2/3 c)
  1                    Lemons -- juice of (6 tb)
    1/2  c             Water
  4      tb            Honey
  2                    Fresh mint sprigs -- for garnish

Place grated carrots in a large bowl. Strain orange and lemon juice
with a sieve to remove seeds and pour over carrots. Add water and
stir in honey. Cover bowl with palstic wrap and refrigerate for at
least 2 hours to let flavors blend. Garnish with mint sprigs before
serving.
