                              Noodle Kugel

  1      lb            Wide egg noodles
  2      tb            Butter -- up to 3 tb (optional)
  3                    Eggs -- can omit yolks
  2      c             Lowfat cottage cheese (1 lb)
    3/4  c             Sour cream or yogurt
  8      oz            Cream cheese
  1      ts            Vanilla extract
  1      ts            Cinnamon -- up to 2 ts
    1/4  c             Sugar -- up to 1/2 c
    1/2  ts            Salt -- up to 1 ts
                       Optional:
  1      tb            Lemon juice -- up to 2 tb
    1/2  c             Raisins -- packed
  1                    Tart apple -- peeled, sliced
  2                    Ripe peaches -- peeled, sliced
                       Optional Topping:
  1      c             Bread crumbs or wheat germ
  1 1/2  ts            Cinnamon
    1/4  c             Brown sugar -- packed

Preheat oven to 375 F. Lightly grease 9x13" pan.

Cook the noodles until about half done. Drain, and toss with butter
or simply rinse in cold water and drain again. Transfer to a large
bowl.

Combine eggs, cottage cheese, sour cream or yogurt, cream cheese,
cinnamon, sugar, and salt in blender or food proc and whip until
smooth--in several batches if necessary. Stir this into the noodles,
along with whatever additional additions you choose. Transfer to the
baking pan.

Combine the topping ingredients, and sprinkle them over the top. Bake
uncovered for about 40 minutes. Serve hot, warm, or at room temperature.
