MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Flaeskesteg Med Svaer (Danish Roast Pork with Crackling)

     Yield: 8 Servings

     6 lb Fresh half ham ie.
          -leg of pork or
          -shoulder of pork;
          -rind on
          Salt
          Fresh ground black pepper

 Preheat oven to 300 F. Using a sharp, heavy knife cut through the
 rind making stripes 1/2" apart lengthwise and crosswise. Rub salt and
 pepper into these gashes. Place it in a shallow roasting pan and
 roast it slowly 2-1/2 to 3 hours uncovered until a meat thermometer
 reads 155 F. Do not baste the meat.

 Raise heat to 450 F briefly, or use the broiler for a few minutes
 to crisp up the rind. When roasted this way the meat should be
 moist and tender and the rind (crackling) very crisp. Remove from
 the oven and let the roast rest for 10-15 minutes before carving. A
 little crackling should be included with each serving of meat.
