Title: Bavarese Ai Frutti Di Bosco (Mixed Berry Bavarian)

500 g Mixed berries
-(strawberries, raspberries,
-blueberries, currants,
-blackberries); frozen are
-ok
200 ml Cream
1 Vanilla bean; slit
-lengthwise
2 Egg whites
1 pn Salt
150 g Sugar
20 g Gelatin sheet; soaked in
-cold water
Confectioners' sugar
Combine in a casserole 120 g sugar, 2 tb water, and the vanilla bean.
Bring to the boil and simmer 2 to 3 minutes.
Beat the egg whites with a pinch of salt in a metal bowl. Pour the hot
syrup in a thin stream and continue to beat the meringue for 5 to 6
minutes until thick and cooled.
Puree the fruits, saving a few for decoration, in a mixer with 30 g
sugar. Pour the puree in a casserole. Bring to the boil and mix in
the gelatin and its soaking water. Let cool.
Pour 1/3rd of this puree into the base of a springform lined with
kitchen paper. Put in the freezer until solid.
Combine the meringue with the remaining fruit puree.
Beat the cream with an electric mixer and carefully fold it into the
meringue mixture. Pour over the frozen puree in the mold. Refrigerate
for at least 4 hours or until sufficiently solid; then undo the
springform and unmold onto a serving platter.
Decorate with the reserved berries and a sprinkling of confectioners'
sugar.
