     Title: Fresh Broad Beans With Pecorino And Prosciutto

     Yield: 4 Servings

   500 g  Fresh young unshelled broad
          -beans -OR-
   175 g  Frozen broad beans; thawed
   110 g  Young pecorino cheese;
          -preferably not the hard
          -grating kind
     6 sl Italian dry-cured ham
          -(prosciutto crudo)
     5 tb Olive oil
     2 tb Freshly squeezed lemon juice
     2 ts Fresh oregano; chopped
     2 tb Fresh parsley; chopped
     1 pn Dried chili flakes
          -(optional)
          Sea salt and freshly ground
          -pepper

 Remove the broad beans from their shells, blanch in boiling water for
 20 seconds, drain and refresh, then pop them out of their skins and
 place in a bowl. If using frozen broad beans, thaw then pop them out
 of their skins and put in a bowl.

 Cut the pecorino cheese into cubes and cut the ham into strips, then
 add to the beans. Whisk together the olive oil, lemon juice, oregano,
 parsley, and pepper flakes, if using, and pour over the bean mixture.
 Toss together and season to taste with salt and pepper. Serve
 immediately.
