     Title: German Onion Potato Soup

     Yield: 4 Servings

     4    Thick slices smoked bacon or
          -Canadian bacon
     4    Onions; peeled and thinly
          -sliced horizontally
     4    Cloves garlic; minced
   1/2 ts Dried marjoram
   1/4 c  Minced parsley
          Salt, pepper and vinegar
          -to taste
     4 c  Rich beef stock
     1 c  Dark beer
     4 sm To medium potatoes;
          -julienned
     1 c  Sour cream
     4 sl Toasted peasant or rye
          -bread; cut into chunks

 In a heavy pot, fry the bacon until brown, remove and chop. To the
 bacon fat, add the onions and garlic and stir-fry until softened and
 golden brown. Add the seasonings, stock, beer, and potatoes. Simmer
 for 20 minutes until potatoes are tender. Add sour cream and heat
 gently. Top with croutons and reserved bacon.
