Title: Golden Ratatouille

1 tb Olive oil -OR-
1/4 c Water
1 sm Onion; diced
1 sm Yellow bell pepper;
- seeded, diced 1/2"
1 sm Eggplant; peeled, diced 1/2"
2 cl Garlic; minced
Salt
Black pepper; freshly ground
2 sm Yellow squash; cut into 1/2"
- thick rounds
4 lg Ripe yellow tomatoes;
- peeled, seeded, chopped
1 tb Fresh thyme; minced
1 tb Fresh parsley; minced
Heat the olive oil or water in a large saucepan over medium heat. Add
the onion, cover, and cook until softened, about 5 minutes. Add the
bell pepper, eggplant, garlic, salt, and pepper to taste, and stir
gently to combine. Cover and cook until the vegetables are slightly
softened, about 10 minutes. Stir in the squash, tomatoes, and thyme.
Cover and cook, stirring occasionally, until all of the vegetables
are tender, about 20 minutes.
