     Title: Croquettes De Pommes De Terre (Potato Croquettes)

     Yield: 8 Servings

     2 lb Potatoes
     4 tb Butter
     3    Egg yolks
     1    Egg
          Salt and pepper to taste
   1/8 ts Ground nutmeg
          Melted butter
     2    Egg whites
          Fine dry bread crumbs

 Peel potatoes and cut into chunks.  Boil in salted water until
 potatoes are soft but not mushy.  Drain potatoes and push through
 fine sieve or potato ricer.  Return puree to saucepan.  Over medium
 heat, shake the potatoes vigorously until all the moisture has
 evaporated and they are very dry. Beat in the butter.  Beat together
 the egg yolks and the egg. Beat mixture into the potatoes.  Add
 seasonings (salt, pepper, nutmeg). Beat until mixture is smooth.
 Butter a baking sheet and spread the mixture on it about 1" thick.
 Brush lightly with melted butter and chill in refrigerator until very
 firm.  Cut potatoes into oblongs and shape quickly into croquettes.
 Dip in egg whites and bread crumbs and deep fry until golden on both
 sides. Drain on absorbent paper and serve immediately.
