     Title: Alsatian Cheese Salad

     Yield: 4 Servings

MMMMM---------------------------SALAD--------------------------------
     3 c  Cheese; cut, in julienne
          -strips or half-inch cubes.
          -Combine Cheddar, Muenster,
          -and a good imported Swiss.
     1    Cucumber; chopped
     1    Sweet bell pepper; chopped
     1    Scallion; minced
     1 lg Tomato; red, firm, chopped

MMMMM--------------------------DRESSING-------------------------------
     1 md Lemon; juice of
     1 lg Lime; juice of
   1/4 c  Mayonnaise
   1/2 c  Yogurt and/or sour cream
   1/2 ts Dijon mustard; (French-style
          -spicy mustard)
   1/2 ts Paprika
   1/2 ts Tarragon
   1/2 ts Marjoram
   1/2 ts Basil
   1/2 ts Horseradish

 Pour the dressing over the combined vegetables and cheese. Chill.

 Serve on a bed of fresh greens, with vegetable sticks, pickles,
 olives, and good, fresh bread... A perfect summer lunch.
