MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Kaiserschmarren

     Yield: 1 Batch

     2 tb Sugar
     5    Eggs
   140 g  Fine cake flour
     1 pn Salt
     2 tb Raisins
     1 oz Rum; up to 2 oz
    50 g  Butter
     1 tb Vanilla sugar
   1/4 l  Milk

 Soak raisins in rum.

 Separate eggs.

 Beat egg whites with sugar and a pinch of salt until stiff.

 Whisk together milk, egg yolks, and vanilla sugar until smooth.

 Stir in flour.

 Fold in egg whites.

 Melt butter.

 Pour batter into oven-proof pan.

 Sprinkle raisins over batter. Bake in a preheated 200 C oven until
 golden brown.

 Remove from oven.

 Tear into pieces with wooden spatulas.

 Heat sugar and butter until lightly caramelized.

 Sprinkle with powdered sugar and serve with plum compote.
