800 g Fresh plums; cut in half and
-the pits removed
1/4 l Water
1 ds Rum
1/8 l Red wine
1/2 Orange; juice and rind of
2 sm Cinnamon sticks
1 ts Vanilla sugar
150 g Sugar
1/2 Lemon; juice and rind of
Prepare pieces of lemon and orange rind using a vegetable peeler.
Caramelize the sugar.
Add 1/3 of the plums.
Pour in the red wine.
Add rum, vanilla sugar, the juice and rind of the citrus fruits,
cinnamon, and water.
Simmer over low heat for 20 minutes, remove rind and cinnamon, and run
through a food mill.
Add the remaining plums to the strained fruit sauce and simmer for
another 10 minutes.
