     Title: Vietnamese Pork Lettuce Wraps

     Yield: 8 Servings

   1/2 c  White vinegar
   1/4 c  Sugar
   1/8 ts Salt
     2 md Carrots; julienned
   1/2 md Onion; in thin slices

MMMMM--------------------------FILLING-------------------------------
     1 lb Ground pork
     1 tb Fresh ginger; minced
     1 cl Garlic; minced
     2 tb Soy sauce
     1 tb Mirin
   1/4 ts Salt
   1/4 ts Pepper
     1 ts Fish sauce (optional)

MMMMM--------------------------ASSEMBLY-------------------------------
     8    Bibb lettuce leaves
   1/2    English cucumber;
          - fine chopped
     1 sm Red bell pepper;
          - fine chopped
     3    Green onions; chopped
   1/2 c  Fresh basil; coarse chopped
   1/2 c  Fresh cilantro;
          - coarse chopped
   1/2 c  Fresh mint; coarse chopped
     1    Jalapeno pepper; seeded,
          - fine chopped
   1/4 c  Salted peanuts; chopped
          Hoisin sauce
          Lime wedges

 In a small bowl, mix vinegar, sugar, and salt until blended. Stir
 in carrots and onion; let stand at room temperature 30 minutes.

 In a large skillet, cook pork, ginger and garlic over medium heat 6
 to 8 minutes or until pork is no longer pink, breaking up pork into
 crumbles; drain. Stir in soy sauce, mirin, salt, pepper and, if
 desired, fish sauce.

 To serve, drain carrot mixture. Place pork mixture in lettuce
 leaves; top with cucumber, red pepper, green onions, carrot
 mixture, and herbs. Sprinkle with jalapeno and peanuts; drizzle
 with hoisin sauce. Squeeze lime juice over tops. Fold lettuce over
 filling.
