     Title: Baked Pineapple Rice

     Yield: 1 Batch

     2 c  Cooked rice
   1/4 c  Pineapple; diced
     2 tb Spring onions; chopped
     3 tb Cooking oil
     2 tb Seasoning sauce
   1/4 ts Pepper
     2    Prawns; blanched
     4    Squid pieces; blanched
     2    Mussels; blanched
     1 ts Seasoning sauce
   1/4 ts Pepper
     1 ts Fried garlic in oil
    10    Fried cashew nuts

 Stir-fry pineapple until fragrant, add rice, seasoning sauce, and
 pepper.

 Add chopped spring onions. When well cooked, arrange in a half
 pineapple shell.

 Stir-fry blanched seafood with seasoning sauce, pepper, and fried
 garlic. Place on top of pineapple rice. Garnish with fried cashew
 nuts and red chillies.
