                            Spicy Thai Slaw

    1/2  c             Dry roasted peanuts -- unsalted
  2      cl            Garlic -- minced
  4                    Scallion -- minced
  2      md            Serrano pepper
  1      lb            Savoy cabbage
    1/2  lb            Cucumber
                       Dressing:
    1/4  c             Rice vinegar
  2      tb            Sugar
    1/2  ts            Curry powder
  1      ds            Soy sauce
  2      tb            Light sesame oil
    1/3  c             Safflower oil
  3      tb            Cilantro

Using a food processor grind peanuts until coarsely chopped and place
in a mixing bowl. Add garlic and scallions to peanuts.

Remove stems and seed from chilies and dry with paper towels. Chop
carefully to avoid getting juice on skin or in eyes. Shred cabbage
and add chilies and cabbage to peanut mixture. Peel, seed, and chop
cucumber and toss in with other ingredients.

Whisk together vinegar, sugar, curry, soy sauce, and add oils
gradually until well blended. Taste for seasoning and add salt if
desired. Pour dressing over salad and mix in cilantro. Cover and
refrigerate for several hours, allowing flavors to blend.
