Title: Bezar Spiced Tandoori Tomato Chickpeas

3 cl Garlic; minced
2 tb Extra virgin olive oil
2 cn Chickpeas
2 cn Whole tomatoes; drained;
-juice reserved
2 ts Ginger powder
2 tb Bezar spice
1 ts Turmeric powder
1 ts Spicy paprika
1 ts Chilli flakes
1 tb Coriander powder
2 ts Ground cumin
2 ts Honey
1 ts Maple syrup
1 c Red and yellow peppers;
-charred; skins removed
Fresh mint; for garnish;
-(optional)
4 Pita; to side
Fry minced garlic in EVOO over medium-low heat until garlic is
fragrant, about 1 minute.
Add drained garbanzos, turn up heat to medium-high, toss around for 1
minute.
Add tomatoes, sans juice. Cut them into small bite-sized cubes, using
the spatula or a pair of scissors.
Add spices and seasonings, stir, and simmer 15 minutes.
Add the rest of the tomato juice, and simmer 10 minutes.
Add charred peppers and stir in, simmering to let the flavours meld,
about 5 minutes.
Serve with pita and fresh mint if you like.
