1 tb Corn oil
1/4 lb Sweet potato vine; cut in
-three-inch lengths
1/4 lb Mushrooms, fresh/meaty;
-caps only, sliced
1 Garlic clove; crushed
1 sm Carrot; julienned (1/3 c)
1 ts Salt; or to taste
1 ts Korean sesame oil
Heat the oil in a wok or skillet. Add the vine and mushrooms and
stir-fry over moderate heat for 1 minute. Add all the other
ingredients and stir-fry for 8 to 10 minutes. Serve warm or at room
temperature. Serves 4.
