     Title: Alaria Cucumber Salad
Categories: Japanese, Salads
     Yield: 3 Servings

     1    Cucumber; thinly sliced
   1/2 ts Sea salt
     1    Dried alaria (12");
          - soaked in fresh water
     2 tb Vinegar or lemon juice
 2 1/2 ts Soy sauce
     1 ts Water

 Sprinkle sliced cucumber with salt, toss gently, and set aside.

 Blanch Alaria briefly. Remove any tough ribs and cut into bite-sized
 pieces.

 Gently squeeze excess water from cucumbers and Alaria, and combine
 them with remaining ingredients. Eat as is or on a bed of lettuce
 garnished with radish slices and sprouts.
