     Title: Ayam Suwir Bumbu Opor (Chicken Shreds In Bamboo Opor)

     Yield: 3 Servings

   1/2    Free range chicken
   500 ml Coconut milk; from 1/2
          -coconut
     3    Blimbis (green tomatoes)
     2    Kaffir lime leaves
     2    Bay leaves
     1    Lemongrass stalk; bruised
     1    Cm Galangal; bruised

MMMMM-----------------------GROUND SPICES----------------------------
     5    Shallots
     3 cl Garlic
     2    Candlenuts; fry with/without
          -oil
     1 ts Coriander; fry without oil
   1/4 ts Cumin; fry without oil
   1/2 ts Turmeric; chopped
   1/2 ts Ginger; chopped
     1 ts Salt

 Heat 2 tb oil to saute ground spices, all leaves, and galangal until
 fragrant.

 Add chicken and bilimbis/green tomatoes, stir until the chicken has
 changed color, then pour in coconut milk and cook until tender.

 Lift the chicken out, shred into small pieces.

 Add chicken shreds back into the stock, and bring to boil.

 Remove from heat when the gravy is thick and tasty.
