MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Sweet Potato Curry 1
Categories: Indian
     Yield: 20 Servings

    10 lb Sweet potatoes
     2 tb Ghee
     1 ts Mustard seeds
   1/4 c  Ghee or butter
     1 cl Garlic
     9    Green pepper (mild)
     1 tb Caraway seed
     1 tb Cayenne pepper;
          - reduce for mild dish
   1/2 tb Black pepper
     5 c  Milk
     2 tb Salt

 Wash and steam the sweet potatoes. Heat ghee in separate pot and pop
 the mustard seeds. Lower the heat and melt the butter; add garlic and
 cook until it browns. Add green peppers and cook for 2 or 3 minutes
 more. Next add the spices and cook for 3 to 5 minutes. Then add milk
 but do not allow to boil. Transfer the steamed sweet potatoes into a
 larger bowl and mix in the sauce. Add salt to taste.
