     Title: Indian Halvah
Categories: Dessert, Indian
     Yield: 8 Servings

     2 c  Milk
   3/4 c  Sugar
     1 c  Butter
 2 1/4 c  Refined semolina
          - (Cream of Wheat)
   1/2 c  Raisins
          - (Golden or Sultanas)
   1/2 c  Almonds; chopped
          Desiccated coconut; to roll

Heat the milk gently and add the sugar. Stir from time to time while
heating so the sugar dissolves. Meanwhile, melt the butter in another
large pan and when liquid, add the semolina. Stir well so that the
semolina absorbs the butter and cooks over the heat. Be careful not
to burn it. Cook for about 5 minutes. When the milk is boiling,
remove the semolina/butter from the heat and pour the milk on it
slowy, meanwhile stirring the mixture. Now return to the heat,
stirring well for a minute or two until all ingredients are
thoroughly cooked together. Remove from heat, add fruit and nuts.
Roll up tablespoons of the mixture into small balls and roll them in
coconut. Leave them to cool. Keeps well in refrigerator.
