MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Gujarati Cucumber And Carrot Pickle

     Yield: 1 Cup

   1/2 c  Cucumber; peeled and cut
          -into strips
   1/2 c  Carrots; cut into strips
     2    Green chillies; slit
   1/2 ts Lemon juice
     1 tb Split mustard seeds (rai na
          -kuria)
   1/4 ts Asafoetida (hing)
   1/4 ts Turmeric (haldi) powder
     1 tb Mustard oil
     1 ts Salt

 Preparation time: 20 minutes Storage: up to 4 days (refrigerated)

 Combine the cucumber, carrots, green chillies, lemon juice, and salt
 and mix well. Leave aside for 15 minutes. Discard the water from the
 vegetables.

 Add the split mustard seeds, asafoetida, turmeric powder, and mustard
 oil and mix well.

 Serve immediately or store refrigerated for up to 4 days.
