MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Kuljeet's Sabzi Masala Mix (Spice Mix For Vegetables)

     Yield: 1 /2 cup

MMMMM-----------------------COOKED SPICES----------------------------
     2 tb Cumin seeds
     2 tb Coriander seeds
     2 tb Cardamom seeds
     2 tb Black peppercorns
     1    Cinnamon; (3-inch) stick,
          -broken up
     1 ts Whole cloves

MMMMM----------------------UNCOOKED SPICES---------------------------
     1 ts Nutmeg
   1/2 ts Turmeric
   1/4 ts Saffron

 Put cumin, coriander, cardamom, peppercorns, cinnamon, and cloves in
 a dry heavy skillet over med-high heat. Toast spices, stirring
 occasionally, until they turn several shades darker and give off a
 sweet smoky aroma, about 10 min. Do not raise the heat to quicken the
 process, or spices will brown prematurely, leaving insides
 undercooked. Cool completely.

 Working in batches if necessary, transfer the mixture to a spice mill
 or coffee grinder and grind to a powder. Stir in nutmeg, turmeric and
 saffron. Use immediately, or store in an airtight container in a
 cool, dry place.

 This spice mix works wonders on rutabaga recipes.  I tried it in two
 different rutabaga soups, and it made them taste twice as good.
