                   Pav Bhaji (Bombay street food) (W)

  4      md            Red potatoes -- boiled & chopped
  2                    Cauliflower heads -- bite size
  2      md            Green pepper -- cored & seeded
  1      c             Green peas
  4      lg            Red ripe tomatoes -- chopped
  2      md            Onion -- sliced
  4                    Green chiles -- or to taste
    1/4  c             Cilantro -- chopped
  2      ts            Cumin seed
  2                    Ginger root pieces --
                       - size of a quarter
  2      lg            Onion -- sliced
  2      lg            Red ripe tomatoes -- chopped
  1      ts            Salt and pepper -- or to taste
  2      ts            Pav Bhaji masaala
    3/8  c             Butter

Grind up tomatoes, onions, green chiles, cilantro, cumin, and ginger
in a blender. Saute the remaining onion in butter until it turns a
golden brown. Add the remaining tomato with the spices and simmer for
a few minutes. Add the contents of the blender and the vegetables.
Simmer until the vegetables are tender (this seem to take longer than
you would imagine). Top with more butter if desired.

To serve as authentic street food slice a loaf of French bread and
toast it in butter in a fry pan. Top with Pav Bhaji and eat out of
hand.
