Bring 6 cups / 1.5 liters of water to a boil in a large saucepan over
high heat. Add the salt and green beans and cook for 3 minutes. Drain
the beans and set aside.
Heat a large wok or saute pan over high heat until a drop of water
sizzles and evaporates on contact. Swirl the oil into the pan, and
then add the shallot and garlic, and stir-fry until the garlic begins
to lightly brown, 30 sec to 1 minute. Add the beans and oyster sauce,
and toss to combine, cooking until the beans are tender but still al
dente, 3-4 minutes.
Season with the black pepper and serve immediately.
