2 lb Calf's tongue
Salt (preferably coarse)
Cooking oil
3 cl Garlic; minced
1 md Onion; quartered
1/2 c Canned tomatoes
1/2 ts Peppercorn
1 Bay leaf
1/4 c Vinegar
1/4 c Soy sauce
1/2 c White wine or water
2 tb Sugar
Rub tongue with salt. Rinse thoroughly. Place in a pot, cover with
water and boil 5 minuteS. Scrape or peel off white hard coating of
tongue. Wash tongue and dry thoroughly.
Brown tongue on all sides in oil, push to one side of pan, saute
garlic, onions and tomatoes, add 1 c water and all other
ingredients. Cover and simmer until tongue is tender.
Transfer tongue to platter; slice. Reduce sauce to 1 c; strain and
pour over tongue. Serve hot or cold.
