     Title: Lumpia Shanghai

     Yield: 50 servings

    12 kg Pork; finely minced
    12 kg Shrimp; finely chopped
    14 kg Onions; finely chopped
    14 c  Soy sauce
    12 tb Salt
    50    Lupia wrappers (spring roll
          Oil; for deep frying

 Mix all ingredients (except wappers and oil!) thoroughly.

 Take a heaped tablespoon of mix and roll in lumpia wrapper.  Make
 roll about 3/4" in diameter.  Cut into 2" pieces using very sharp
 knife.

 Deep fry.

 Serve with soy sauce and calamansi, sweet & sauce, or chili sauce.
