     Title: CHINESE ONION CAKE

     2 c  Unbleached flour
   3/4 c  -Water
     4 tb Lard
     2 ts Course sea salt
     4    Green onions

 Scallion Pancakes: 1.) Combine 2 cups unbleached flour and 3/4 cup water.
 Knead until smooth, about (10 min). Let stand for 15 to 20 minutes, covered
 with a damp cloth. Divide into 4 parts.
  2.) Mince 4 green onions, divide into 4 equal parts and set aside.
  3.) Using a rolling pin, roll each dough section out into a thin pancake.
  4.) Spread 1 Tbs. lard evenly over the surface of each of the four
 pancakes. Sprinkle 1/2 tsp. of course sea salt evenly over each pancake.
 Evenly spread the green onions over each of the pancakes.
  5.) Roll each, tightly, into long rolls. Coil and pinch ends.
  6.) Using a rolling pin, roll into four 8" pancakes with a rolling pin.
  7.) Fry 1 to 2 minutes on each side. Then cover with lid and steam
 briefly.Cut into 8 sections. Serves 4 as a side dish, 8 as an appetizer.
