     Title: Hoisin Braised Baby Bok Choy And Shiitake Mushrooms

     Yield: 4 Servings

     3 tb Hoisin sauce
     1 tb Low-sodium tamari
     1 tb Sake
     1 tb Water
     1 tb Vegetable oil -OR-
   1/4 c  Water
     2    Dried chiles
     1 ts Fresh ginger; minced
     1 ts Garlic; minced
     4 sm Baby bok choy; trimmed,
          - halved lengthwise
     4 oz Fresh shiitake mushrooms;
          - stems removed,
          - caps thinly sliced
     2 tb Scallions; thinly sliced

 In a small bowl, combine the hoisin, tamari, sake, and water, and set
 aside.

 Heat the oil or water in a wok or large skillet over medium-high
 heat. When the oil is hot, add the chiles and stir-fry for about 30
 seconds. Discard the chiles. Add the ginger and garlic and stir-fry
 until the garlic is fragrant, about 30 seconds. Add the bok choy,
 mushrooms, scallions, and sauce, and stir-fry to coat the vegetables,
 2 to 3 minutes.

 Reduce the heat to low, cover, and simmer until the vegetables are
 tender, about 15 minutes. Serve hot.
