     Title: Sweet Potato Ginger Soup

     Yield: 5 Servings

   600 g  Sweet potato
     1 bn Pandan leaves; (about 7
          -stalks); washed and tied
          -into a knot
    60 g  Ginger; lightly bruised to
          -release juice
     3 tb Brown sugar; or to taste
    40 g  Dried longan
 5 1/2 c  Water

 Prep time: 10 minutes
 Cook time: 15 minutes
 Total time: 25 minutes

 A sweet Chinese dessert soup spiced with the heat of ginger and
 scented with the fragrance of pandan leaves. Heartwarming and
 soothing especially during the colder weathers.

 Peel and cut the sweet potatoes into small pieces of similar size.
 Place pandan leaves, ginger, dried longan and water into a medium
 sized pot and bring to a boil. Once the water boils, add sweet
 potatoes and simmer for about 7 - 10 minutes or until the potatoes
 are just cooked through. Do not overcook the sweet potatoes or they
 will become too soft and disintegrate easily into the soup.

 Remove pandan leaves. Sweeten with brown sugar to taste. Ladle into
 individual bowls and serve immediately.
