Title: Fried Spareribs With Sweet & Sour Sauce - Stephen Yan

Yield: 4 Servings
1 lb Spareribs; country style,
- chop in bite size pieces
1 tb Light soy sauce
1 pn Gourmet powder
1 pn Salt
2 tb White vinegar
6 tb White sugar
1 md Green pepper; slivered
6 sl Ginger
2 cl Garlic; crush & skinned
2 Green onion;
- chop in 2" lengths
1 tb Tapioca starch
1/2 c Water
2 tb Peanut oil
Peanut oil; for deep frying

1 lg Egg; beaten with dash of
- salt
1 c Flour
1/4 ts Baking powder
3/4 c Water
Marinate the spareribs with gourmet powder, salt, and light soy
sauce for 30 minutes.
Prepare batter-mix with flour, baking powder, egg, and water.
Coat spareribs with batter-mix and deep fry in hot peanut oil for
5 minutes. Remove to a platter and drain on paper towel.
Heat up the wok with HIGH heat, add 2 tb of peanut oil and put in
garlic, ginger, green pepper, and onion to brown for 1 minute. Then
add the tapioca starch, 1/2 cup of water, vinegar, and sugar into
the wok; mix well. Bring to a boil, return cooked spareribs, mix
and serve hot.
