MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Red Glutinous Rice Wine Chicken

     Yield: 4 Servings

   800 g  Chicken thighs
     2 tb Sesame oil
     6 tb Oil
    60 g  Old ginger
     6 tb Red wine lees
   300 ml Red glutinous rice wine
   200 ml Water
    10 g  Dried black fungus
   1/2 ts Salt
     6 tb Oil; for frying ginger
          Coriander; for garnish

 Time: 1 hour 30 minutes

 Cut chicken thighs into bite sized pieces.

 Add 2 tb red wine lees to chicken thighs, massage the wine lees into
 chicken thighs. Cover and marinate for 1 hour.

 Soak 10 g dried black fungus until softened, drain, and set aside.

 Thinly julienne 60 g of the old ginger.

 Heat 6 tb oil and fry 30 g of julienned ginger until crispy. Remove
 and place on kitchen paper.

 Heat 1 tb oil (from frying the ginger) and 2 tb sesame oil, add 30 g
 julienned ginger. Stir until fragrant.

 Add in 4 tb red wine lees and stir fry until fragrant.

 Add marinated chicken and stir fry until the meat changes colour.

 Add in soaked black fungus, 250 ml red glutinous rice wine, and
     200 ml water.

 Cover and simmer for 20 minutes or until the chicken is cooked. Stir
 occasionally.

 Turn off heat. Stir in 50 ml of red glutinous rice wine.

 Dish out, garnish with crispy fried ginger and coriander.
