1/2 c Olive oil
1/2 c Vegetable oil
1 lg Russet potato, peeled and
-cut into 1/4" cubes
1 md Yellow onion, peeled and
-minced
2 cl Garlic, peeled and minced
1/2 lb Ground beef
1/2 lb Ground pork
2 tb Chinese thick soy sauce
1 tb Sugar
Salt & pepper
Minchi Con Batatas Fritas
Heat olive oil and 6 tb of the vegetable oil in a medium pot
over high heat until hot. Add potatoes and fry until crisp and
golden, about 15 minutes. Transfer potatoes, using a slotted
spoon, to paper towels to drain.
Meanwhile, heat remaining 2 tb vegetable oil in a wok over high
heat until shimmering. Add onions and stir-fry until golden, about
2 minutes. Add garlic and stir-fry until fragrant, about 30
seconds. Add beef and pork and stir-fry until meat loses pink
color, about 2 minutes. Add soy sauce, sugar, and salt and pepper
to taste and simmer about 4 minutes.
Stir potatoes into minchi just before serving so that the potatoes
remain crisp.
