1 1/2 c Iceberg lettuce -- shredded
1/2 c Carrots -- julienned
1/2 c Jicama -- peeled, julienned
1/2 c Cilantro -- rough chopped
Lime-Jalapeno Vinaigrette:
2 Shallots -- minced
2 Jalapenos -- minced
2 cl Garlic -- minced
3 tb Kime juice
1/4 c Olive oil
Salt
Combine salad ingredients in a bowl. In a small mixing bowl combine
shallots, jalapenos, garlic, and lime juice. Whisk in oil and season
to taste with salt. Toss salad with vinaigrette.
