MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Ceviche de Jibia
Categories: Seafood, Citrus, Chilies, Squash
     Yield: 3 Servings

   400 g  Jibia (squid or cuttlefish)
          Lime juice
     1 md Red onion; minced
     1 md Tomato; seeded, diced
     1 md Cucumber; diced
     2 tb Cilantro; chopped
     1 lg Jalapeno; stemmed, seeded,
          - diced fine

 Simmer the jibia (squid) in salted water, drain and cut into 1 cm
 (1/3") cubes.

 Marinate the cubes in lime juice with the minced onion for 2 to
 3 hours. Add remaining ingredients and serve with tortilla chips.
