     Title: Budin De Arroz (Rice Pudding)
Categories: Mexican, Puddings
     Yield: 1 Batch

     1 c  White rice
     6 c  Water
     5    Cinnamon sticks
     2 c  Sugar
     8 oz Can evaporated milk
     6 c  Cinnamon tea

 Cinnamon Tea:

 Place cinnamon sticks in 6 cups of water, add sugar, & bring to a full
 boil. Remove cinnamon sticks--strain for cinnamon tea.

 Budin De Arroz:

 Combine 1 cup of rice and 6 cups of cinnamon tea in a saucepan, set on
 moderate heat--stir frequently until mixture comes to a boil. Reduce
 heat to low--cover and simmer for 30 minutes or until rice is very
 tender. Stir in milk and mix well--cover and let mixture stand for 20
 minutes. Serve with a sprinkle of cinnamon on top.
