2 lb Goat meat
1/2 c Onions -- sliced
1 Ccallion
2 cl Garlic -- finely chopped
1 tb Salt
1 tb Black pepper
2 1/2 tb Curry powder
1 Hot peppers -- finely chopped
2 tb Oil
1 ts Lime juice
6 c Water -- boiling
1/2 c Coconut milk
2 oz Butter
1 ts Sugar
1 Thyme sprig
Wash goat meat and cut in pieces, sprinkle with salt and pepper. Add
curry, scallion, onion, garlic and hot pepper. Work these into the meat.
Cover, let stand for 1-1/2 hours.
Heat the oil. Add meat and seasonings, sprinkle lime juice over. Fry
lightly for five minutes, stirring. Add 4 cups boiling water, and
simmer, covered, 2-3 hours until meat is tender, stirring from time
to time. Add water as needed. Add coconut milk, margarine, sugar, and
thyme. Cook for five minutes more.
Serve accompanied by plain white rice, roti, chutney, sliced beets,
grated coconut, raisins, ripe banana, and slice sweet peppers.
