     Title: Yam Fou Fou

     Yield: 6 Servings

     6 lg Yams
     3 tb Rice flour
     1 tb Water; warm
          Salt; to taste
          Black pepper;
          - freshly milled, to taste

 Peel yams, cut into large pieces, and boil until tender, then drain
 and mash them. Stir in the rice flour, salt, and pepper with the
 water and continue mashing until smooth. Re-heat gently and serve.
