3 c Dark greens; shredded
1 tb Peanut oil; for sauteing
3 c Water
1 tb Flour; dissolved in:
Water; cold
2 c Cooked lima beans or other
- white beans
2 tb Roasted peanuts; ground or
- finely crushed
Salt; to taste
Black pepper;
- freshly milled; to taste
In a heavy saucepan, saute greens in oil briefly and cover with
water. Bring to a boil and simmer until tender. Gradually add the
flour, stirring constantly until the mixture thickens. Add the other
ingredients and simmer, stirring constantly for 5 minutes.
