2 c Cooked Giant Lima beans;
-drain, mash, and cool
1 Egg; beaten
1 sm Onion; minced
4 cl Garlic; minced
2 tb Chili powder
1/4 ts Cayenne
Salt and pepper
All-purpose flour;
-for coating
Peanut oil; for deep frying
Mustard; for dipping
Place the mashed beans, eggs, onion, garlic, chili powder and
cayenne in a bowl and mix thoroughly. Adjust the seasonings with
salt and pepper. Form into 1-1/2 inch balls and dredge in flour.
Let the balls sit for 10 minutes. Deep fry in peanut oil @ 375 F
until golden brown. Serve with mustard.
