Prepare ascorbic-citric mixture according to package directions;
sprinkle over peaches, mixing well. Set aside.
Cream butter and sugar; add egg, beating well. Cook egg mixture in
top of a double boiler, stirring constantly, until thickened and
mixture coats a metal spoon. Cool.
Fold egg mixture into whipped cream. Alternate layers of whipped
cream mixture, cookie crumbs, peaches, and ginger in parfait glasses.
Chill 2 hours.
