8 oz Pineapple chunks -- in juice
1/2 c Strawberries -- sliced
1/2 md Papaya -- peeled and chopped
1 md Banana -- peeled and cubed
1 Kiwi fruit -- peeled and cubed
2 tb Lemon juice
1 1/4 tb Corn starch
1 tb Brown sugar
3/4 ts Cinnamon
6 Fat-free flour tortillas
Powdered sugar
Preheat oven 400 F. Line baking sheet with foil and lightly spray
with nonfat cooking spray. Drain pineapple, reserving liquid. In a
large bowl, combine pineapple, strawberries, papaya, bananas, and
kiwi; mix lightly. In a small saucepan, combine reserved pineapple
juice, lemon juice, and corn starch, stirring until blended. Heat
over medium heat until mixture thickens; stir in brown sugar and
cinnamon; mix until sugar is dissoved and blended smooth. Fold in
fruit. Wrap tortillas in foil and heat in oven 3 to 5 minutes, just
until warmed through. Place fruit mixture down the center of each
tortilla and roll up tightly. Place, seam side down, on baking sheet
and bake for 8 to 10 minutes, until lightly browned. Sprinkle with
powdered sugar and serve immediately.
