3/4 c Red or white wine
1 1/4 c Water
3 sl Lime or lemon
5 sl Fresh ginger (quarter-size) --

1 Cinnamon stick (3") -- halved
1/8 ts Ground cardamom
2 c Mixed dried fruit -- * see note
* Excluding dates and apricots.
Combine all the ingredients in the cooker. Lock the lid in place and
over high heat bring to high pressure. Adjust heat to maintain high
pressure, and cook for 5 minutes. Let the pressure drop naturally or
use a quick release method.
Remove the lid, tilting it away from you to allow any excess steam to
escape. Remove the cinnamon sticks and serve warm, or refrigerate in
a tightly sealed container until needed (up to two weeks).
