Kiwi Ice

1 c Sugar
1 c Water
9 md Kiwi fruit -- ripe
1/4 c Lime juice -- freshly squeezed
In a 2 qt saucepan over medium low heat, combine sugar and water and
stir until sugar dissolves. Increase heat and boil 5 minutes, without
stirring to make a syrup. Remove from heat and set aside.
Cut 8 of the kiwis in half and remove pulp with a teaspoon. Puree
pulp. You need about 2 cups. In a bowl stir together pulp, syrup, and
lime juice. Turn into a freezer containers, cover and freeze until
mixture begins to harden, about 1 hour. Remove from freezer, place
mixture in a bowl, and beat until smooth and light. Return to
freezer, and freeze until firm. (Can be frozen up to 6 months.)
To serve, spoon kiwi ice into sherbet glasses. Peel and slice the
remaining kiwi and insert a slice in each serving.
Note:
The beautiful color of kiwi makes a lovely dessert presentation,
especially when garnished with ripe red strawberries or sprigs of
mint. If you don't plan to store this light dessert for a long time
consider a presentation alternative: Save the kiwi peels once you've
removed the pulp and use them as shells to serve the ice. Spoon the
ice into each shell for the final freeze and serve once the ice has
hardened.
