8 oz Queso blanco fresco -- cubed
1 oz Crema Mexicana
1 c Flour
1 ds Salt
1 Egg
1 c Milk
4 oz Orange marmalade
Confectioner's sugar
2 tb Grand Marnier
4 oz Orange juice
Combine the flour, salt, egg, milk, and butter with 2 tb very cold
water and mix until smooth. In a Teflon pan, cook the crepes and fill
with cubed queso blanco fresco. Heat the orange juice, marmalade, and
the Grand Marnier and pour over the crepes. Dust with confectioner's
sugar and decorate with a spoonful of crema Mexicana.
