                              Maple Crepes

  4      Large Whole   eggs (1 c.)
  2      C.            sifted flour
  2      C.            milk -- room temperature
    1/4  C.            melted butter
  2      Tbsp.         brandy
  1      Tsp.          salt
  1      Tsp.          grated lemon rind
                       Maple Butter:
  2 1/2  C.            butter
  1      C.            pure maple syrup
    1/2  Tsp.          maple extract

Crepes: Mix all ingredients in blender; let stand 20
minutes. Pour 1/4 to 1/3 cup batter in hot crepe pan, brown on
both sides and pile on top of each other. Yields 18 crepes.
Maple Butter: Cut butter into cubes; blend with syrup
and extract. Whip until light; melt butter and coat crepes
with butter. Roll crepes up, sprinkle with confectioners sugar
and serve with extra warm maple butter.
