     Title: Dark Chocolate Cream Brulee

     Yield: 8 Servings

     2 c  Whipping Cream
     2 c  Half And Half
     8 oz Semi-Sweet Chocolate;Finely
          -Chopped
     8    Egg Yolks
   1/3 c  Sugar

     8 T  Sugar

Preheat oven to 300F. Bring cream and half and half to a boil in a
large heavy saucepan. Reduce heat to low add the chocolate and whisk
until smooth. Remove from heat. Whisk yolks and sugar in a large bowl
to blend, gradually whisk in chocolate mixture. Divide mixture evenly
among 3/4 cup custard cups and place cups in a large baking pan. Add
enough hot water to come halfway up the sides of the cups. Bake until
custards are set, about 50 minutes. Cover and chill for 2 hours.
Sprinkle 1 tbl of sugar over each custard and broil (or use a torch)
until sugar turns golden then refrigerate for another 2 hours or until
