                       Choco-Cinnamon Angel Cake

  1 1/2  c             Egg whites -- (10-12 lg)
  1      c             Cake flour -- sifted
  1 1/2  c             Powdered sugar
  3      tb            Cocoa powder
    1/2  ts            Cinnamon
  1 1/2  ts            Cream of tartar
  1      ts            Vanilla
  1      c             Granulated sugar

Bring egg whites to room temperature.

Sift flour, powdered sugar, cocoa powder, & cinnamon thoroughly.
Set aside.

In large mixing bowl, beat egg whites, cream of tartar, & vanilla
with an electric mixer on medium speed until soft peaks form.

Gradually add sugar, 2 tb at a time, beating on high speed until
stiff peaks form.

Sift 1/4 of flour mixture over beaten mixture, and fold in gently.
Repeat, folding remaining mixture in by fourths.

Pour into ungreased tube pan.

Bake on lowest rack of oven at 350 F for 40-45 minutes or until top
springs back when lightly touched.

Immediately invert and allow to cool.
