Oreo Truffles Recipe

1 package of Oreo cookies or enough to make 4 cups of Oreo cookie crumbs
1 (8 oz) package of cream cheese, softened
2 1/4 cups of good quality semi-sweet chocolate chips

optional flavoring (to taste):
Grand Marnier
almond extract
peppermint extract

optional coatings:
medium flaked coconut
ground nuts (walnuts, almonds, hazelnuts)
unsweetened cocoa powder

Use a food processor or blender to reduce all the Oreo cookies to fine
crumbs.  Set aside.

Melt chocolate in a double boiler OR empty chocolate chips into a large
microwaveable mixing bowl and microwave on high, stirring at 45
second increments, until the chips are melted.  It shouldn't take
more than two or three minutes - but watch carefully, as chocolate goes
from melted to burnt very quickly in the microwave.

Add optional flavoring and the softened cream cheese and mix thoroughly
with chocolate, until all white streaks are gone.  Do not mix in food
processor as mixture will be stiff.

Add three cups of the Oreo crumbs.  The mixture will be stiff, but
continue stirring until it is thoroughly combined and fairly smooth.
Can be mixed in stand mixer.

Set out a shallow bowl containing the last cup of Oreo crumbs.
Form mixture into small balls (about 3/4?) and roll in Oreo crumbs,
coconut, ground nuts or cocoa to lightly coat.

Place each Oreo truffle into a paper candy cup.  Store in the fridge
and serve slighly chilled for the best texture and taste.
